How to Roast Beets

  1. Wash beets and remove the leafy greens.
  2. Line a baking pan or cookie sheet with tin foil and place the beets on it.
  3. Drizzle with olive oil and sprinkle with salt and pepper.
  4. Fold tin foil in half to seal in the beets (pinching the sides of the foil together).
  5. Roast in a 400° oven for up to an hour.
  6. If a fork slides into one easily they are done. If not, continue and check every 10 minutes.
  7. When they’re done let them cool, then peel with a vegetable peeler and the skin should slide right off.
